Sauvignon Blanc
“No new oak!” is the theme for Gino Razzi’s Sauvignon Blanc from Penns Woods Winery.
“Sauvignon Blanc is a delicate grape, and it needs special handling”, says Gino.
After a short period of skin contact, fermentation takes place in a combination of 3rd and 4th year preconditioned French oak barrels. A following period of lees contact adds a layer of depth and complexity.
Deep golden lemon with notes of green in color, this wine is whole, supple, and complex, with hints of tangerine peel, grapefruit pith, and traces of minerality. A slightly, almost gunmetal touch is present on the long and persistent aftertaste.
“For me, Sauvignon Blanc is the ultimate challenge”, says winemaker Gino Razzi. “I need to display the elegance and delicacy of the grape, but also to show the power and complexity that the wine can attain.”
Enjoy this wine with heavier white meat dishes like chicken or veal, preferably with mushroom-based sauces or herbaceous preparations. Or, just on it’s own!
